Molehiya, also known as "molokhia" or "mloukhieh," is a traditional dish in Cypriot cuisine, particularly enjoyed in the summer. It is made from the leaves of the Corchorus plant, which are also known as jute or Jew's mallow. The dish has roots in Middle Eastern and North African cuisines and has been adapted to Cypriot tastes over the centuries.
